What - - -
actually means.

The remote sends and receives data through the control board; when that link breaks, it shows dashes instead of temperature and humidity. On a wireless remote the device may be out of range. On a wired one, the board powers the remote through the cable at about 7 volts DC, so a loose plug, a damaged cable or a missing transformer supply can all bring on the dashes.

01

If the remote is wireless, move it closer to the unit or connect it with the supplied cable.

If the screen still shows dashes, or goes blank when batteries are removed from a wired remote, book a visit to test the voltage along the cable and at the board.

What not to do

Dashes do not tell you whether the unit is cooling; it may be running normally behind a remote that cannot report it. A remote that can open its settings but still shows dashes is often set (setting 30) to read a remote sensor it cannot find.

Questions
about - - -.

Can I clear - - - myself?
If the remote is wireless, move it closer to the unit or connect it with the supplied cable. If it comes back, it needs a visit.
Is my Wine Guardian still cooling if the remote shows dashes?
Possibly. The dashes only mean the remote has no data; check whether air is moving from the unit and whether the room feels cool.
Do I need batteries in a wired Wine Guardian remote?
No. A wired remote draws its power through the cable from the board, so batteries are not required.
Can a settings change cause dashes on a Wine Guardian?
Yes. If setting 30 tells the remote to read only a remote sensor that is missing, it can show dashes even with a good cable.
